FOR the second year Maison Bonnat  will produce bars it purchases of this now sought after bean by securing the totality of the last of this season’s crop, which comes from only two plantations in Venezuela.

LAST year’s Bonnat Porcelana bar, with 75% cocoa content, was introduced at the Paris Salon du Chocolat and immediately sold out to Maison Bonnat’s representatives in France and a few world destinations.

STEPHANE Bonnat explains that true Porcelana is present only in Venezuela but trees have been exported to neighboring countries over centuries, where these have evolved as Porcelana related varieties, with many of the same features, but character all their own.

LONG neglected for its strange appearance, olive shaped and pale, lack of reliable quality and difficulty in processing to bring out its full taste spectrum, it was even frequently pulled and destroyed.

QUANTITIES are small from all three countries.  The beans are on their way to Bonnat as the crops come to and end and the bars will be available around late summer. Watch for availability and description of each provenance as Stephan Bonnat releases them.

STEPHANE Bonnat will then present the three as a collection aimed at enlightening the connoisseur in the subtleties and variations Maison Bonnat can coax out of these unruly, rare and long forgotten “cousins”.
